is there a certain way to add nuts to your cheese, or is this a no - no? I'm just starting out you see, and really want to make a nutty cheese

Wed, August 13, 2008 - 8:53 AMI feel like I've only seen soft cheese with nuts, but that doesn't mean it can't be done. Curious to find out... smoked cheeses and nuts would be yummy.
I think some nuts are more mold-bearing than others, too, so keep that in mind, as it might affect cultures unless you toast them first to kill whatever's on them. I can't say I can back up this statement, it comes from the Whole Approach candida treatment forum, which doesn't necessarily mean it's true. -

Sun, August 17, 2008 - 4:04 PMI was thinking also that toasting the nuts would be the best way to go. I have not tried putting nuts in cheese, but experiments are the best way to get information. Let us know if you try it how it goes. I may try as well. I have a bunch of black walnuts and imagine their flavor would be amazing in a hard cheese.

Wed, February 18, 2009 - 9:07 PMThought I would share...I made a soft creamy cheese yesterday with a little maples syrup and toasted hickory nuts, I served it to a class and people were going crazy wanting the recipe. It was quite good. I just put some fromage blanc in the blender, added a little milk to make it really creamy. Then I put a little maple syrup and toasted hickory nuts and mixed these in by hand. It was quite yummy on homemade crackers.
