So I love to ask this question in my cheese making classes and will pose it to all of you:
If I were from another planet and said to you what is cheese? What would you tell me?

Ah, thanks for sharing, this is the first time I have heard this description...I suspect most cheese lovers would concur. Any other ideas?

Re: What is cheese?
Mon, February 16, 2009 - 12:30 AMhmmm.. the old problem of how to describe flavors without saying 'tastes like...' comes to mind.
Is umami the right descriptive term for the flavor of cheese, by the way? en.wikipedia.org/wiki/Umami -

Re: What is cheese?
Mon, February 16, 2009 - 9:43 AMI would probably chicken-out and fall on poetry. Queso fresco tastes like clouds on a winter day, brie is the kiss of summer on an oak leaf, cheedar is sunshine on a daffodil...and finally I'd give up and say, "It tastes like cheese!"

Mon, February 16, 2009 - 12:05 PMI think we are on to something...it is a challenge, I usually fall back on Little Miss Muffet eating her curds and whey. The separation of solids and liquids. We may as a group come up with the perfect description.
