So I love to ask this question in my cheese making classes and will pose it to all of you:

If I were from another planet and said to you what is cheese? What would you tell me?

A smooth, usually creamy orgasmic substance with varying textures and flavors, generally made from milk.

      "creamy orgasmic substance"

Ah, thanks for sharing, this is the first time I have heard this description...I suspect most cheese lovers would concur. Any other ideas?

hmmm.. the old problem of how to describe flavors without saying 'tastes like...' comes to mind.

Is umami the right descriptive term for the flavor of cheese, by the way? en.wikipedia.org/wiki/Umami

I would probably chicken-out and fall on poetry. Queso fresco tastes like clouds on a winter day, brie is the kiss of summer on an oak leaf, cheedar is sunshine on a daffodil...and finally I'd give up and say, "It tastes like cheese!"

mmmm cheese: a happy heterogeneous co-habitation of bacterium, scrumptiously alive and well in an unspecified (usually dairy) matrix.

I think we are on to something...it is a challenge, I usually fall back on Little Miss Muffet eating her curds and whey. The separation of solids and liquids. We may as a group come up with the perfect description.
