Hi all,
I am off this weekend to take an advanced cheese making class. I am wanting to refine my skills of handling the curds for hard cheese and in creating a curing environment in my home. And of course I am hoping that eating cheese will be involved. I am looking forward to the class and will update you all when I return.

I just returned from Mass, where I took an adanced cheese making class. Great information and tips on making as well as aging cheese. One of the highlights of the weekend was when the instructor went into his cheese cave and unearthed a crock that contained a round of cheese that was curing in the grape skins from last falls harvest and wine making..wow. The smell when he opened this crock was unbelievable..I can't wait to give this a try next fall after we make wine!
I also got a lot of tips on how to improve my cheddar's and gouda's as well as mold ripened cheese. I am excited and it is hard to share the whole thing, but if anyone has questions I am happy to share what I harvested.
